Not to hijack the brine / wet cure ratio tread I’ll start a new one . Brewers will not split a case of pork belly anymore so if anyone would like to split a case ( 3 bellies per case ) pm me. I like skin off. So if I could get a couple guys it would be more than 50% less than what you pay at Sams or Costco per lbs. most run 12-14 lbs per belly . I’ll be gone for awhile be in SW Iowa trying to get me a Bambi during early muzzy. I will check pms when I get back.
