Not sure on alfalfa but in the past deer have fed on my clover all winter, scratching thru the snow to get to it.

In my opinion the deer will eat it still but its kind of a last resort. After a freeze which we have had several, the nutritional value is almost nill and none in alfalfa/clover but will act as a filler for them. My clover plots were also getting hit pretty good in october but now I might just see one or two stop and nibble and some just pass through on there way elsewhere. With that being said, late winter when almost everything else in gone, they will probably return in a big way.
